Ice cream is known for being smooth, creamy, and delicious. However, it is not typically known for being very healthy. There is one ingredient that can change all of that: avocado powder. Combine the avocado powder and coconut milk. Let this mixture sit and rest for about 30 minutes. This should give the avocado powder time to hydrate and absorb the coconut milk. You should come back to a mixture that is creamy and uniform.
Place your avocado mixture in a large mixing bowl. Stir in the lemon juice, sour cream, the inner contents of the vanilla bean, salt, and honey. Once this mixture is well combined, set it aside.
On the stovetop, combine the heavy cream and sugar. Heat gently until the sugar melts. Do not allow the mixture to boil!
Slowly stir the cream and sugar mixture into the avocado mixture. Once the two are combined, beat on high speed for 5 minutes. This should make the mixture light and fluffy. If the mixture does not seem to be lightening, you can add additional heavy cream, one tablespoon at a time. Keep beating until your last addition is fully incorporated.
Transfer the mixture to a freezer-safe container with a lid. Make sure you smooth it out evenly on the top. Place the container in the freezer, and let your mixture freeze for at least 4 hours. After that, check it to see whether it is firm. If it's still soft enough to stick a finger into, then you need to freeze it a bit longer. Finally, when your avocado ice cream is firm, scoop some into a bowl, and enjoy it.
